Fish with Amaranth

Amaranth is a food rich in vitamin B12, calcium, magnesium, carbohydrates, and flaxseed; combined with fish, it is a very rich source of nutritional value. Try this delicious dish, which is also cooked with Aceite Nutrioli®, 100% pure soybean oil, with a better balance of omegas 3 and 6. Enjoy eating healthy with this fish with amaranth!

  • 1 1/2 cups amaranth, for the coating
  • 4 pieces fish, 200 g slice c/n
  • salt, for the fish
  • pepper, for the fish
  • 1 teaspoon garlic powder, for the fish
  • 1 teaspoon chile flakes, for the fish
  • 1/4 cups lime, for the fish
  • 1/2 cups honey, for the fish
  • Nutrioli ® oil
  • 1/2 cups onion, in strips, for the sautéed vegetables
  • 1 tablespoon garlic, finely chopped, for the sautéed vegetables
  • 1 cup yellow bell pepper, in strips, for the sautéed vegetables
  • 1 cup red bell pepper, in strips, for the sautéed vegetables
  • 3 tablespoons soy sauce, for the sautéed vegetables
  • 1 cup spinach, clean, only leaves, for the sautéed vegetables
  • red onion, pickled, for garnish

Low
  • In a hot skillet over low heat, toast the amaranth for 2 minutes without stopping to stir. Place on a wide plate, cool, and set aside.
  • In a large bowl, place the fish and season with salt and pepper, add garlic powder, chili flakes, and lime juice. Cover with honey on both sides and let rest for 20 minutes in the refrigerator.
  • After the resting time, place the fish on the toasted amaranth and cover completely, using the palms of your hands to press it down.
  • In a hot skillet, pour in Aceite Nutrioli® over medium heat; place the fish covered in amaranth and cook for 10 minutes or until both sides are perfectly cooked. Drain on paper towels.
  • For the sautéed vegetables, add a little Aceite Nutrioli® to a skillet, sauté onion and garlic, add colorful bell peppers and soy sauce. Add spinach and season with pepper.
  • Serve the fish with the sautéed vegetables and accompany with pickled red onion.
