3 tablespoons unsalted butter
1/2 cups leek, only the white and light green parts, cut into 1 cm pieces.
1/3 cups dry white wine
1/3 cups sour cream
2 tablespoons chives, finely chopped
1/4 cups chicken broth
1 tablespoon olive oil
4 white fish fillets, like Sea Bass with its skin

Melt the butter in a skillet over medium-low heat.
Add the chopped leeks and let them cook for about 5 minutes.
Add the white wine and let it simmer for another 4 minutes, until the leeks are tender.
Add the cream and the scallions. Wait for it to boil and then reduce the heat slightly.
Season with salt and pepper. Remove from heat and take half of the mixture and place it in a blender.
Add the chicken broth to the blender until it becomes a sauce.
Meanwhile, heat the olive oil in a skillet over medium heat.
Season the fish fillets with salt and pepper and place them in the skillet skin side down. Let them brown for about 5 minutes.
Flip the fish fillets and cook for another 4 minutes, until cooked through. Set aside on a plate.
Place a fillet on each plate and drizzle with the leek sauce.
