Fish with Creamy Leek Sauce

A delicious recipe for preparing fish fillets like sea bass or salmon. The creamy leek sauce is delicious!

  • 3 tablespoons unsalted butter
  • 1/2 cups leek, only the white and light green parts, cut into 1 cm pieces.
  • 1/3 cups dry white wine
  • 1/3 cups sour cream
  • 2 tablespoons chives, finely chopped
  • 1/4 cups chicken broth
  • 1 tablespoon olive oil
  • 4 white fish fillets, like Sea Bass with its skin

  • Melt the butter in a skillet over medium-low heat.
  • Add the chopped leeks and let them cook for about 5 minutes.
  • Add the white wine and let it simmer for another 4 minutes, until the leeks are tender.
  • Add the cream and the scallions. Wait for it to boil and then reduce the heat slightly.
  • Season with salt and pepper. Remove from heat and take half of the mixture and place it in a blender.
  • Add the chicken broth to the blender until it becomes a sauce.
  • Meanwhile, heat the olive oil in a skillet over medium heat.
  • Season the fish fillets with salt and pepper and place them in the skillet skin side down. Let them brown for about 5 minutes.
  • Flip the fish fillets and cook for another 4 minutes, until cooked through. Set aside on a plate.
  • Place a fillet on each plate and drizzle with the leek sauce.
