  • Preheat the oven to 180°C.
  • On a cutting board, season the fish fillets with olive oil, salt, and pepper on both sides.
  • Place the corn leaves on a tray, arrange the fish fillets, and add cream, asadero cheese, poblano chili, and corn kernels.
  • Wrap and close as if it were a tamale. Bake for 20 minutes or until the fish is cooked.
  • Remove from the oven and serve hot, accompanied by red rice.
