Fish Wrapped with Green Bean Salad

Delicious and nutritious fish in raw green sauce accompanied by purple onions and yellow lemon with epazote and cilantro. Served with tender green beans. Ideal for a light and delicious meal.

  • 2 cups tomatillo
  • 1/2 cups lime juice
  • 1 Habanero chile, roasted
  • 1 clove garlic, roasted
  • 1 teaspoon salt
  • 4 fish
  • 2 teaspoons olive oil
  • 4 pinches salt
  • 4 lemons, sliced
  • 1/2 red onions, cut into strips
  • 4 serrano chiles
  • 4 tablespoons fresh cilantro, fresh
  • 1/4 cups epazote, cut into strips
  • 1 cup green beans
  • 4 teaspoons olive oil
  • 4 pinches salt

  • Preheat the oven to 180° C.
  • Add the tomato, yellow lemon juice, habanero chili, garlic, and salt to the blender. Blend very well.
  • Lay out a sheet of aluminum foil with parchment paper on top, add the fish and brush with olive oil, add salt, the sauce, lemon slices, onion, chili, cilantro, and epazote. Close and bake for about 20 minutes.
  • In a small pot with boiling water and salt, cook the green beans for 5 minutes until tender. Drain and set aside.
  • Serve the fish with the green beans seasoned with olive oil and salt.
