4 white fish fillets, like Nile perch
1 1/2 tablespoons butter, cut into 4
1 sprig fresh thyme
salt, to taste
pepper, to taste
400 grams spinach
300 grams button mushrooms
olive oil
balsamic vinegars

Preheat the oven to 190 degrees Celsius.
Brush the aluminum with olive oil.
Sprinkle the fish fillets with salt and pepper
Place each fillet on the paper. Add spinach and mushrooms on top of each fillet, and drizzle olive oil, vinegar, salt, and pepper on top.
Carefully fold the packets to ensure they are well sealed.
Cook on a tray in the oven for 10 minutes. Serve immediately.
