Lemon Fish

  • 2 tablespoons extra virgin olive oil, to season the fish
  • 4 tablespoons lime juice, seedless
  • 1 tablespoon dried oregano, to season the fish

  • 4 white fish fillets, 200 g to 250 g per piece
  • 3/4 cups pumpkin, in medium slices
  • 3/4 cups white onion, in medium slices
  • 1 lime, in slices

  • Mix the extra virgin olive oil, two tablespoons of lemon juice, oregano, and enough salt and pepper in a bowl until well combined.
  • Brush the fish fillets with the previous preparation, cover well so that the flavor is absorbed, and marinate in the refrigerator for 10 minutes.
  • Place the fish fillets in a baking dish and top with slices of zucchini, onion, and lemon, then season with salt and pepper. Cover the fish with aluminum foil, ensuring there are no uncovered spaces, and bake at 170 °C.
  • Remove the lemon fish from the oven, add the remaining lemon juice, and serve. You will love it!
