Rainbow Trout

  • 8 anchovy fillets
  • 50 grams black olives
  • 250 milliliters dry white wine

  • Wash the trout fillets very well, remove the bones and entrails. Wash again and dry.
  • Season the inside, placing capers, 1/4 bay leaf, and a couple of anchovy fillets inside each trout. Close and secure with toothpicks, place in a pot, season with salt and pepper, add the olives, and pour in the wine.
  • Cover the trout with parchment paper and let boil for 10 minutes or until the sauce reduces.
