Preparation
Wash the trout fillets very well, remove the spines and viscera. Wash again and dry.
Season inside, inside each trout, put capers, 1/4 bay leaf and a couple of anchovy fillets. Close and hold with chopsticks, put in a pot, season with salt, add the olives and add the wine.
Cover the trout with baking paper and boil for 10 minutes or until the sauce is reduced.
