Shrimp-Stuffed Fish Mexican Style

Eating fish or seafood in general can be simpler and have touches of traditional cooking. A great example is this Shrimp-Stuffed Fish Mexican Style recipe, which is baked and accompanied by sautéed spinach and a touch of chipotle. Remember that when cooking seafood, the most important thing is not to overcook it, as it can become rubbery or tough.

  • 1 tablespoon butter
  • 1/2 cups onion, finely chopped
  • 1 tablespoon garlic, finely chopped
  • 400 grams pink shrimp
  • 3 tomatoes, finely chopped
  • 1 tablespoon ground chipotle chile
  • 1/3 cups orange juice
  • 3 tablespoons fresh cilantro, finely chopped
  • salt and pepper
  • 4 sea bass fillet, 200 g each
  • 1 tablespoon butter
  • 1/4 cups onion
  • 1 tablespoon garlic
  • 2 cups spinach
  • lemon, for garnish
  • sprouts, pea sprouts, for garnish

  • Preheat the oven to 180°C
  • In a skillet, melt the butter and cook the onion with the garlic, add the shrimp, the tomato, the ground chipotle, the orange juice, the cilantro, salt, and pepper. Cook for 3 minutes, remove and cool.
  • Season the fish fillets with salt and pepper and fill them with the shrimp. Roll them up and secure with a wooden toothpick if necessary.
  • Place the fish rolls on a baking tray and bake for about 20 minutes or until cooked through.
  • Meanwhile, melt the butter in a skillet and cook the onion, garlic, and spinach until they release their juices. Season with salt and pepper.
  • Serve a bed of spinach on each plate, place the fish, and garnish with yellow lemon and pea sprouts. Enjoy.
