Christmas Cod

The typical recipe for delicious Christmas cod. Prepared with potatoes, olives, tomato broth, yellow chiles, and lots of home flavor. This is a typical dish for the December holidays, give it a try.

  • 1 kilo Langa® cod
  • 4 potatoes
  • 3 tablespoons butter
  • 2 onions, chopped
  • 2 cloves garlic
  • 1/2 cups parsley, chopped
  • 3/4 cups Sierra Gata® olive oil
  • 1 1/2 tablespoons Bogador® red pepper
  • 4 eggs, chopped hard-boiled eggs
  • 10 Excelencia® black olives
  • 10 Excelencia® green olives

  • Soak the Langa cod in cold water for 24 hours, changing the water at least 5 times during soaking.
  • Bring a large pot of water to a boil, add the Langa cod and boil for 5 minutes or until the fish is tender. Pour the fish into a deep bowl and set aside.
  • In a small bowl, mix the Sierra Gata® olive oil, garlic, parsley, Bogador® red pepper, and pepper. Add the mixture to the Langa cod and mix gently.
  • Preheat the oven to 175 degrees Celsius. Place the potatoes in the water in which the fish was boiled and bring to a boil. Cook for approximately 20 minutes until the potatoes are tender. Transfer to soak in cold water, then peel and cut.
  • In a large skillet, melt the butter and add the onion, cooking until golden. Add a clove of garlic to the onions and set aside.
  • Grease a baking dish with butter and layer one layer of potatoes, one layer of Langa cod, and half of the onion mixture. Repeat these layers once more and finish with the onions.
  • Cook for 15 minutes in the oven until the potatoes are lightly golden.
