The typical recipe for delicious Christmas cod. Peparada with potatoes, olives, tomato sauce, güeros chiles and a lot of home flavor. This is a typical dish for the holiday season, try it.

Ingredients

8 portions
  • 1 kilo cod Langa
  • 4 potatoes
  • 3 tablespoons butter
  • 2 onions, chopped
  • 2 cloves garlic
  • 1/2 cups parsley, chopped
  • 3/4 cups Sierra Gata® olive oil
  • 1 1/2 tablespoons Bogador® red pepper
  • 4 eggs, chopped hard
  • 10 Excellence olives black
  • 10 Green olives Excelencia®
  • to taste black pepper

Preparation

Dip the Langa cod in cold water for 24 hours, changing the water at least 5 times during immersion.
Boil a large pot of water, add the Langa cod and boil for 5 minutes or until the fish is soft. Pour the fish into a deep bowl set aside.
In a small bowl, mix Sierra Gata® olive oil, garlic, parsley, red pepper Bogador® and pepper. Add the mixture to the cod Langa and mix gently.
Preheat the oven to 175 degrees Celsius. Put the potatoes in the water where the fish was boiled and put to boil. Cook for approximately 20 minutes until the potatoes are tender. Go to soak in cold water, and go to peel and cut
In a large pan, melt the butter and add the onion, cook until golden. Add a clove of garlic to the onions and set aside.
Grease a baking dish with butter and arrange a layer of potatoes, a layer of Langa cod, and half of the onion mixture. Repeat these layers one more time and finish with the onion.
Cook for 15 minutes in the oven until the potatoes are lightly browned.

PRESENTATION

Before serving decorate with the Olives Excelencia® and the eggs, decorate with the remaining parsley.

TIPS
