Fish Fillet with Teriyaki Sauce

  • 2 cups chicken broth
  • 1/3 cups sugar
  • 1/3 cups hoisin sauce
  • 1/4 cups sherry
  • 1/2 teaspoons ground ginger
  • 2 tablespoons ketchup
  • 2 tablespoons cornstarch
  • 4 sea bass fillet
  • salt, to taste
  • pepper, to taste

  • Bring the two cups of chicken broth to a boil. Add 1/2 tsp of ground ginger and stir.
  • Add 1/3 cup of sugar, 1/3 cup of hoisin sauce, and 2 tablespoons of ketchup. Let it boil.
  • In 1/4 cup of Sherry, stir in the cornstarch until completely dissolved. NOTE: THERE SHOULD BE NO LUMPS AS BOILING MAY CAUSE THICKNESS ISSUES.
  • Pour the sherry into the other ingredients while continuously stirring to prevent sticking or clumping.
  • Season the fish fillets with salt and pepper to taste and place them in a greased baking dish.
  • Pour the sauce over the fish and cover with aluminum foil.
  • Bake at 180°C for 15 minutes or until the fish is cooked through.
