Fish in Tikinxic

  • 2 kilos grouper fillet
  • salt and pepper
  • 4 cloves garlic
  • 4 limes
  • 150 grams achiote
  • 5 bitter oranges
  • 1 banana leaf
  • 200 grams onion powder, in strips
  • 200 grams tomato, in strips
  • 200 grams bell pepper, in strips
  • 4 sprigs epazote
  • 150 grams lard, or vegetable oil

  • Clean the fish fillets.
  • Prepare the following mixture: lemon juice with salt, pepper, and garlic. Then dip the fillets in it for a few minutes.
  • Then prepare the achiote paste, dissolving it with the orange juice until it becomes a spreadable paste. Avoid making the paste too watery.
  • Next, marinate the fish with the achiote paste and let it rest for at least an hour.
  • While the fish is marinating, take the banana leaf, clean it, and pass it lightly over the stove flame. This makes the leaf easier to handle for the next step.
  • After letting it rest, make a base with the banana leaf to wrap the fish (as if making tamales). The portion of fish is to your liking.
  • But before covering it, add the tomato, onion, sweet pepper, epazote, and add two teaspoons of lard or oil.
  • Once the ingredients are placed, you can wrap it in aluminum foil to prevent the ingredients from leaking out.
  • Bake for approximately 45 minutes.
