The delight of fish made like cochinita pibil. This fish is a dish of Yucatecan origin. A gem of Mexican cuisine that you must try. It is perfect for Lent or for any of your events. Prepare this different and amazing option.
Prepare the following mixture: lemon juice with salt, pepper, and garlic. Then dip the fillets in it for a few minutes.
Then prepare the achiote paste, dissolving it with the orange juice until it becomes a spreadable paste. Avoid making the paste too watery.
Next, marinate the fish with the achiote paste and let it rest for at least an hour.
While the fish is marinating, take the banana leaf, clean it, and pass it lightly over the stove flame. This makes the leaf easier to handle for the next step.
After letting it rest, make a base with the banana leaf to wrap the fish (as if making tamales). The portion of fish is to your liking.
But before covering it, add the tomato, onion, sweet pepper, epazote, and add two teaspoons of lard or oil.
Once the ingredients are placed, you can wrap it in aluminum foil to prevent the ingredients from leaking out.
Bake for approximately 45 minutes.
