The delight of the fish made like cochinita pibil. This fish is a dish of Yucatecan origin. A jewel of Mexican cuisine that you have to try. It is perfect for Lent or for any of your events. Prepare this different and incredible option.

Ingredients

8 servings
  • 2 kilos of grouper fillet
  • to taste of salt and pepper
  • 4 cloves of garlic
  • 4 pieces of green lemon
  • 150 grams of achiote
  • 5 pieces of bitter orange
  • 1 piece of banana leaves
  • 200 grams of onion powder in rajas
  • 200 grams of tomato in rajas
  • 200 grams of sweet chili pepper in rajas
  • 4 twigs of epazote
  • 150 grams of lard or vegetable oil

    Preparation

    The fish fillets are cleaned.
    The following mixture is prepared: lemon juice with salt, pepper and garlic. Then the steaks are passed in it for a few minutes.
    After the achiote paste is prepared, it dissolves with the juice of the oranges, until leaving a spreadable paste. It is necessary to avoid that the pasta is very watered down.
    Then marinate the fish with achiote paste and rest for at least an hour.
    While the fish is marinated, take the banana leaf, clean it and go through the fire of a stove, very slightly. This to be more manageable the sheet for the next step.
    After letting rest, make a base with the banana leaf, to wrap the fish (as if tamales will be made). The portion of fish is to your liking.
    But before covering it, add the tomato, onion, sweet pepper, epazote, and add two teaspoons of butter or oil.
    Once the ingredients are placed, they can be wrapped with aluminum foil to prevent the ingredients from spilling out.
    Bake approximately 45 minutes.

    PRESENTATION

    It is placed on a flat plate with everything and leaf. And it is accompanied with a very Yucatecan sauce known as X'nipek and refried black beans with tortilla chips.

    TIPS

    Instead of fillets you can use whole fish cut sideways.
