Preparation
The fish fillets are cleaned.
The following mixture is prepared: lemon juice with salt, pepper and garlic. Then the steaks are passed in it for a few minutes.
After the achiote paste is prepared, it dissolves with the juice of the oranges, until leaving a spreadable paste. It is necessary to avoid that the pasta is very watered down.
Then marinate the fish with achiote paste and rest for at least an hour.
While the fish is marinated, take the banana leaf, clean it and go through the fire of a stove, very slightly. This to be more manageable the sheet for the next step.
After letting rest, make a base with the banana leaf, to wrap the fish (as if tamales will be made). The portion of fish is to your liking.
But before covering it, add the tomato, onion, sweet pepper, epazote, and add two teaspoons of butter or oil.
Once the ingredients are placed, they can be wrapped with aluminum foil to prevent the ingredients from spilling out.
Bake approximately 45 minutes.
