100 grams guajillo chile, deveined and hydrated
50 grams ancho chile, deveined and hydrated
3 cloves garlic
100 grams white onion
300 grams tomatillo
bay
thyme
black pepper
50 cubic centimeters vinegar
1 kilo fish fillet
salt
1 cup pineapple, chopped into pieces
300 grams green onion

In a pan, sauté the chiles, garlic, onion, tomato, herbs, and pepper. Add vinegar and blend.
Pour the preparation over the fillets and let marinate for half an hour.
Sear the marinated fillet in a pan previously cut into strips. Adjust the seasoning.
Cut into pieces and form the tacos, served with onion, cilantro, a very spicy salsa, and lime.
