In a pan, sauté the chiles, garlic, onion, tomato, herbs, and pepper. Add vinegar and blend. Pour the preparation over the fillets and let marinate for half an hour. Sear the marinated fillet in a pan previously cut into strips. Adjust the seasoning. Cut into pieces and form the tacos, served with onion, cilantro, a very spicy salsa, and lime.
