Fish with Cauliflower Rice

This original recipe of fresh and crispy baked fish combined with cauliflower rice is amazing for avoiding grains in our diet. In addition to being low in calories and very nutritious, it is very tasty.

  • 1 package Eva® cauliflower bits, for cauliflower rice
  • 1 tablespoon olive oil, for the cauliflower rice
  • 1 lime, juice, for the cauliflower rice
  • 1 tablespoon lemon zest, for the cauliflower rice
  • 1 tablespoon ground dried chili, for the cauliflower rice
  • 1/2 cups peppermint, finely chopped, for the cauliflower rice
  • 1/2 cups red bell pepper, cut into small cubes, for the cauliflower rice
  • 1 serrano chile, sliced very thin
  • 1 pinch salt
  • 1 pinch pepper
  • 1 tablespoon coconut oil
  • 1 grouper fillet, with skin
  • 1 tablespoon pimentón
  • 1 lemon, sliced for garnish

  • In a bowl, mix the Eva® Cauliflower Bits, olive oil, lemon juice, lemon zest, crushed pepper, fresh mint, finely chopped peppers, serrano chili, season to taste, and set aside.
  • Heat a skillet over medium heat, add coconut oil, place the fish fillet skin-side down, season to taste, sprinkle with paprika, cover with a lid, and cook until perfectly done. Remove from the skillet.
  • Serve the cauliflower rice as the base on your plate and add the fish ready to eat. Add a slice of yellow lemon. Enjoy.
