Fish with Tomatillo Sauce

  • 1/4 onions, roasted, for the tomatillo sauce
  • 2 cloves garlic, roasted, for the tomatillo sauce
  • 6 tomatillos, cut into quarters, for the tomatillo sauce
  • 2 cuaresmeño chiles, seeded, roasted, cut into thin strips, for the tomatillo sauce
  • 1/4 cups parsley, for the tomatillo sauce 
  • 1/2 cups cilantro, for the tomatillo sauce 
  • 1 teaspoon cumin, for the tomatillo sauce 
  • 1/2 teaspoons anise, for the tomatillo sauce 
  • 1/2 cups water, for the tomatillo sauce 
  • 2 tablespoons olive oil, for the tomatillo sauce 
  • salt, for the tomatillo sauce 
  • pepper, for the tomatillo sauce 
  • 4 white fish
  • 1/4 cups olive oil
  • 2 tablespoons garlic, finely chopped
  • salt
  • pepper
  • radish, sliced, for garnish
  • leaves marjoram, for garnish
  • white rice, for serving

  • In a blender, combine onion, garlic, tomatillo, Jalapeño chile, cilantro, parsley, anise, cumin, and water and blend until completely incorporated. Pour blended mixture into a small pot with olive oil. Season with salt and pepper. Cover and cook for 5 minutes. Set aside.
  • Place white fish in a baking dish and marinate for 30 minutes with olive oil, garlic, salt, and pepper. Refrigerate.
  • In a skillet over low heat, cook white fish on both sides.
  • Ladle green sauce on a plate and place a white fish steak on top. Serve fish with tomatillo sauce sauce with white rice on the side garnished with radish and marjoram leaves.
