Delicious golden fish sautéed in butter with a tasty tomato sauce and baked with vegetables. It's a delightful option for lunch or dinner with the family.
Season the fillets with salt and pepper, and lightly brown them in butter.
Once browned, place them in a glass baking dish.
In a separate pan, pour some olive oil and sauté onion and garlic until they are translucent, then add bell pepper and tomato, seasoning with salt and pepper to taste. Place on top of the fish. Add olives, capers, bay leaves, and oregano. Cover with wax paper.
Bake for 15-20 minutes or until the fish is cooked through.
Serve with steamed rice and bread toasted with butter.
