Fried Mojarra with Salsa Macha

  • 2 cloves garlic, for the salsa macha
  • 2 cups árbol chile
  • 1 tablespoon sugar, for the salsa macha
  • 1 tablespoon sea ​​salt, for the salsa macha
  • 1/4 cups sesame seeds, toasted
  • 1/4 cups peanuts, toasted and finely chopped
  • 2 cups flour
  • 3 mojarra fish, medium

  • Heat Mazola® corn oil in a pot over medium heat, add the garlic and cook for 2 minutes or until lightly golden. Then, add the chiles, cook for 10 seconds, remove from heat, and let the oil cool.
  • Blend the chiles with the garlic, brown sugar, and sea salt for 2 minutes, but remember that it is not necessary to grind too much, as we want it to have some texture. Place the salsa macha in a bowl and add some of the strained oil, sesame seeds, and peanuts. Set aside.
  • Brush the mojarra with the salsa macha on both sides, then coat it in flour completely. Marinate for 10 minutes.
  • Heat enough oil in a deep pot and fry the mojarra for 10 minutes or until well golden. Remove from the oil and place on a plate with absorbent paper.
  • Serve the fried mojarra with salsa macha on a platter and accompany with more salsa, lime, and salad.
