Ingredients: 2 cups Mazola® corn oil, for the salsa macha; 2 cloves garlic, for the salsa macha; 2 cups árbol chile; 1 tablespoon sugar, for the salsa macha; 1 tablespoon sea salt, for the salsa macha; 1/4 cups sesame seeds, toasted; 1/4 cups peanuts, toasted and finely chopped; 2 cups flour; 3 mojarra fish, medium; Mazola® corn oil; white rice, for serving; salad, for serving; lime, for serving

Heat Mazola® corn oil in a pot over medium heat, add the garlic and cook for 2 minutes or until lightly golden. Then, add the chiles, cook for 10 seconds, remove from heat, and let the oil cool. Blend the chiles with the garlic, brown sugar, and sea salt for 2 minutes, but remember that it is not necessary to grind too much, as we want it to have some texture. Place the salsa macha in a bowl and add some of the strained oil, sesame seeds, and peanuts. Set aside.
