Cod with Chickpeas

Cod with chickpeas is a recipe that has been passed down from generation to generation in my family. It is a preparation of fresh cod, perfect for Lenten meals, very easy to prepare, and has a very delicious flavor.

  • 1 kilo tomato
  • 4 garlic
  • 1 red bell pepper
  • 1 glass water
  • 750 grams cod
  • 1 can chickpeas, (400 g)
  • 1 cup olive oil
  • salt, to taste
  • white peppers, to taste
  • basil, to taste, chopped

  • Place a pot on medium heat on the stove. Once it boils, add the tomatoes for 2 minutes. Transfer them to a bowl with water and ice. Once they are cold, remove the skin. Cut them into quarters and remove the seeds. Dice them.
  • Cut the bell pepper into strips.
  • Add olive oil to a pan and place it on the stove. Once the oil reaches medium temperature (before it starts to smoke), add the garlic cloves and lower the heat.
  • After 5 minutes, add the bell pepper; once it is soft, incorporate the tomato and add a glass of water. Add the chickpeas.
  • Season the fish with salt and pepper and cut it into cubes; add it to the previous preparation. Cover it and let it cook for 20 more minutes. Once ready, add the basil.
