Cod with chickpeas is a recipe that has been passed down from generation to generation in my family. It is a preparation of fresh cod, perfect for Lenten meals, very easy to prepare, and has a very delicious flavor.
Place a pot on medium heat on the stove. Once it boils, add the tomatoes for 2 minutes. Transfer them to a bowl with water and ice. Once they are cold, remove the skin. Cut them into quarters and remove the seeds. Dice them.
Cut the bell pepper into strips.
Add olive oil to a pan and place it on the stove. Once the oil reaches medium temperature (before it starts to smoke), add the garlic cloves and lower the heat.
After 5 minutes, add the bell pepper; once it is soft, incorporate the tomato and add a glass of water. Add the chickpeas.
Season the fish with salt and pepper and cut it into cubes; add it to the previous preparation. Cover it and let it cook for 20 more minutes. Once ready, add the basil.
