Cod with chickpeas is a recipe that has been passed down from generation to generation in my family. It is a preparation of fresh cod, which is perfect for the Lenten meals, it is very simple to prepare and has a very, very rich taste.

Ingredients

4 portions
  • 1 kilo tomtato
  • 4 garlic
  • 1 red bell pepper
  • 1 glass Water
  • 750 grams cod
  • 1 can chickpea, (400 g)
  • 1 cup olive oil
  • salt, to taste
  • white pepper, to taste
  • basil, to the chopped taste

Preparation

Place a pot over medium heat on the stove. Once it breaks the boil add the tomatoes for 2 minutes. Pass them to a container with water and ice. Once they are cold, remove the skin. Cut them in quarters and remove the seeds. Pin them in small squares.
Cut the pepper into strips.
Add the olive oil to a pan and place it on the stove. Once the oil has a medium temperature (before it starts to release smoke), add the garlic cloves and lower the temperature.
After 5 minutes add the pepper, once it is soft, add the tomato and add a glass of water. Add the chickpeas.
Salpimienta the fish and cut it in pictures, add it to the previous preparation. Cover it and allow it to cook for 20 more minutes. Once ready, add the basil.

PRESENTATION

Accompany with bread.

TIPS

If you do not get fresh cod, use salted cod, just do not forget to soak it overnight to remove the salt.
