Place a pot on medium heat on the stove. Once it boils, add the tomatoes for 2 minutes. Transfer them to a bowl with water and ice. Once they are cold, remove the skin. Cut them into quarters and remove the seeds. Dice them. Cut the bell pepper into strips.
