Fish with Saffron Sauce

  • 2 fish, of 300 g each
  • 2 tablespoons olive oil
  • 2 cloves garlic, finely chopped
  • 1/2 cups white wine
  • 1 teaspoon saffron
  • 1 cup whipping cream
  • 1 teaspoon salt
  • 1 teaspoon ground pepper
  • 150 grams chorizo, of soy
  • 1 cup butter, at room temperature

  • For the fish with saffron sauce: melt butter in a 25 cm diameter skillet over medium heat, and add finely chopped garlic. Sauté for 1 minute. Add white wine and reduce by ¾. Add heavy cream, mix well, and then add saffron and salt. Cook for 5 minutes.
  • Slice the soy chorizo into thin rounds. Heat a 15 cm diameter skillet over high heat, and fry the chorizo without fat until well browned. Remove the browned chorizo and set aside.
  • In a 30 cm diameter skillet, heat oil over medium heat. Season the fish fillets with salt and pepper and fry them in the skillet until well browned and cooked through. Remove the fillets from the skillet and set aside.
  • On a flat plate, place a bit of sauce as a mirror, place the fillet on top, and decorate with flakes of soy chorizo.
