  • Place a rack on a tray and put the fish on it, seasoning it with garlic powder, salt, and pepper. Set aside.
  • Spread mayonnaise all over the fish.
  • For the marinade: Blend the roasted tomato, roasted onion, roasted garlic, chilies, salt, vinegar, clove, oregano, black pepper, and cumin. Pour the mixture over the fish and evenly brush its entire surface. Let the grilled fish marinate for 2 hours. Preheat the oven to 180 °C.
  • Place the charcoal in a burner over direct heat until it is ignited and smoking, then transfer it to a heat-resistant container and place it at the bottom of the oven. Put the oven rack on top and bake the fish at 180 °C for 30 minutes, or until golden brown on the outside and cooked through on the inside.
  • Serve the grilled fish on a platter and garnish with orange slices and onion slices. Accompany with rice, salad, lime, and tortillas.
