Mexican Sardine Quesadillas

  • 2 tablespoons vegetable oil
  • 1/2 cups onion, finely chopped
  • 1 cup tomato, in small cubes
  • 1/4 cups serrano chile, sliced
  • salt
  • pepper
  • 1/4 cups cilantro, finely chopped
  • 2 cups sardine, in tomato sauce
  • corn tortillas, hot
  • vegetable oil, to fry the quesadillas
  • guacamole, to accompany
  • lime juice, to accompany

  • Heat the oil in a pan over medium heat. Add the onion and tomato and cook for 2 minutes. Incorporate the chili and sardine. Crumble the sardines in the pan and cook for 5 minutes. Remove from heat and let cool.
  • Fill the tortillas with two tablespoons of the filling, close, and secure with a toothpick.
  • Fry the quesadillas in a pan with oil over medium-high heat for 5 to 8 minutes or until golden brown. Remove and place on paper towels.
  • Serve the sardine quesadillas and accompany with guacamole.
