Mini Fish Burgers

500 grams fish, type mackerel
500 grams fish, type horse mackerel
4 burger buns
4 slices cheese
2 tomatoes
1 can tomato, concentrated (small)
4 tablespoons brown sugar
1 pinch salt
breadcrumbs
1 egg

Chop the fish very finely with a knife and make a ball about the size of your hand.
Shape the burgers and store them in the fridge.
Cut the tomatoes in half, add a little salt, and sprinkle sugar on top.
Roast the tomatoes in the oven until they are nicely browned.
When they are ready, take them out of the oven and mix them with the can of concentrated tomato.
Blend everything well with a mixer and strain it to ensure there are no lumps.
If it’s not sweet enough, we can add a little more sugar.
Coat the burgers by passing them through egg and breadcrumbs. Fry them briefly in hot oil. Remove excess fat with paper towels.
Serve with mayonnaise or homemade tartar sauce.
