Canned sardines can be a lifesaver, and this is a different way to enjoy them, very much in the Mexican style.

1 can sardine, in tomato
1/4 onions, finely chopped
2 Jalapeño chiles, chopped
2 tablespoons epazote, finely chopped
salt and pepper
1 tomato, chopped
vegetable oil

Separate the sardines from the broth, set aside.
Fry the onion, tomato, and chiles, add the sardines and let them fry very well. Once the ingredients are well combined, add the sardine broth.
Let it boil and finally add the epazote; don’t forget to adjust the flavor and add salt and pepper if necessary.
