1/2 cups fresh spinach
1/2 cups oyster mushrooms, sliced
1 glass white wine
1 cup fish broth
2 1/4 cups FAGE® Total 0% greek style yogurt

Put the wine and broth in a saucepan and reduce by one third.
Add the mushrooms and FAGE® Total 0% Greek Style Yogurt and reduce by half.
Roll the sole fillets and poach for 5 minutes.
When ready, sauté the spinach leaves in a pan with a little water and salt, and drain well.
Place the fillets on top and pour the sauce over them.
