Sardine Pancakes with Amaranth

This recipe is very natural and nutritious with a Mexican touch. The sardine although many do not like it for its taste, we can eat it in different ways.   • 1 sardine
  • 2 eggs
  • 200 grams amaranth
  • 2 wheat flour
  • 3 sprigs fresh cilantro, finely chopped
  • 2 tablespoons lime juice
  • 1 tablespoon olive oil
  • salt

  • Open the can of the sardine and drain it as much as you can leaving it almost dry.
  • Place it in a bowl and add the 2 tablespoons of wheat flour, add the two egg yolks, squeeze the juice of two lemons, salt to taste and mix everything, without beating it too much.
  • Take a portion with your hand of the already mixed sardine dough and knead it until you get the shape of a football.
  • In a container put the white of the two eggs, take a ball and soak and so on. Roll them in an extended dish with amaranth.
  • You put a pan over medium heat with olive oil to warm and fry the pancakes.
  • For the final touch, chop cilantro as fine as you can and add lemon juice, salt to taste and place it on top of the pancakes when serving.
