Siete Puertas Fish

  • 4 red snapper fillets, of 200 grams each
  • 2 leaves bay
  • 1 sprig thyme
  • 1 sprig parsley
  • salt, and pepper to taste
  • 1 stick butter
  • 3 cloves garlic, chopped
  • 1 teaspoon oregano
  • 1 teaspoon pepper
  • 2 1/2 cups tomato purée
  • 1/4 cups ketchup
  • 2 teaspoons Worcestershire sauce
  • 3/4 cups Parmesan cheese, grated

  • Wash the fillets, place them on a tray with water, salt, bay leaf, thyme, and parsley. Bring to a boil over the heat.
  • When the fillets are cooked, remove them and drain.
  • Grind the oregano, pepper, and salt in the mortar. Heat the butter and add the garlic, then add the tomato puree, ketchup, Worcestershire sauce, and season with the spices.
  • Place the fillets in a baking dish, pour the sauce over them, and sprinkle with Parmesan cheese. Put them under the broiler.
