Smoked Marlin Tacos with Cheese

  • 2 tomatoes
  • 1/2 kilos smoked marlin
  • 1 onion
  • 2 Jalapeño chiles
  • 100 grams Manchego cheese
  • 1 bunch fresh cilantro
  • corn tortillas
  • 1 tablespoon butter
  • salt, and pepper to taste

  • Shred the smoked marlin. Set aside.
  • Place the butter in a pan to sauté the marlin along with the finely chopped tomato, chili, and onion. Add salt and pepper to taste.
  • Place the marlin stew in each tortilla with a handful of grated cheese.
  • Brown each taco in butter (optional) or if you prefer, just heat the tortillas.
  • Once browned, bathe them with a flag sauce made with tomato, onion, and cilantro. Add lime to taste.
