Veracruz-style Tilapia

  • 2 tablespoons olive oil
  • 1/2 onions, finely chopped
  • 1 tablespoon garlic, finely chopped
  • 4 tomatoes, in cubes
  • 1 leaf bay
  • 1/2 tablespoons thyme
  • 2 Jalapeño chiles
  • 1/3 cups green olives, in slices
  • 3 tablespoons capers
  • 1/4 cups white wine
  • 2 tilapia fillets
  • salt
  • pepper
  • chervil

  • Heat olive oil in a skillet over medium heat and cook the onion for a couple of minutes, add the tomato, bay leaf, thyme, and oregano. Cover and cook until the tomato releases its juices.
  • Add the jalapeño pepper, olives, capers, and white wine, cook for 5 minutes, and reduce the sauce a little. Add the tilapia, salt, pepper, cover with some of the sauce, and cover until the fish is cooked.
  • Garnish with Chinese parsley. Serve with rice and enjoy.
