Fresh Fish with Cilantro and Ginger

  • white fish
  • coarse salt
  • ground peppers
  • 3 cloves garlic, peeled and finely chopped
  • 1 tablespoon fresh ginger, finely chopped
  • 1 serrano chile
  • 1/3 cups fresh cilantro, chopped
  • 1/4 cups white wine
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • chives, chopped

  • Pre-heat the oven.
  • Season the fish with salt and pepper on both sides and place it in a refractory.
  • Add garlic, ginger, coriander and chili without seeds to the food processor, with white wine, soy and sesame oil. Mix until there is a paste.
  • Add the mixture over the fish. Cook 8 to 10 minutes or until well cooked.
  • Add the chopped scallion and cilantro over the fish.
