Fried Shrimp with Spicy Sauce

This shrimp recipe is breaded and fried, and finally tossed in a spicy mayonnaise sauce. Very delicious as a snack!

1/4 cups vegetable oil, for frying
2 eggs
3/4 cups flour
1/2 cups cornstarch
1 pinch pepper
750 grams shrimp, peeled and deveined
1/2 cups mayonnaise
1 tablespoon Sriracha sauce, or chipotle sauce
2 tablespoons honey

Prepare the sauce: mix the mayonnaise, sriracha sauce, honey, 1/4 teaspoon of salt, and 1 tablespoon of water. Stir and set aside.
Prepare the shrimp, heating about 5 cm of vegetable oil in a pot over medium heat until it registers 180 degrees on a thermometer.
Whisk the eggs in a deep plate.
Stir together the flour, cornstarch, and 1 teaspoon of salt and pepper.
Dip the shrimp first in the flour mixture, then in the egg mixture, and return to the flour mixture once more.
Fry the shrimp in the oil until golden brown, about 1-2 minutes. Place on paper towels to absorb the excess grease.
Dip the shrimp in the prepared spicy sauce and serve over a bed of leaf lettuce.
