In a food processor, place the garlic, rosemary, thyme, wine, oil, Dijon mustard, and 1 tablespoon of coarse grain mustard. Chop until well combined.
Transfer to a small deep plate and add the other tablespoon of coarse grain mustard. Stir.
Preheat the oven broiler and place the salmon in a baking dish. (Tip: Place aluminum foil under the salmon to avoid mess). Season the salmon with salt and pepper and place in the oven for 3 minutes.
Remove from the oven and generously top with the mustard sauce prepared. Return to the oven for another 5-7 minutes, until the salmon is cooked and the sauce starts to brown.
Transfer the salmon fillets to individual plates and serve with lemon.
