Stuffed potatoes have become one of our favorites, and we couldn't miss a tuna-stuffed potato option, gratinated with a cheese mix. Perfect to serve as a side dish, main course, or even as a canapé with baby potatoes.
On a sheet of aluminum foil, place a potato, pour olive oil, salt, and pepper; wrap the potato with the foil; make sure to seal it perfectly. Repeat until all potatoes are wrapped. Place the wrapped potatoes on a baking tray and bake for 60 minutes at 200 °C. Remove from the oven and let cool.
Hollow out the center of the potatoes with a spoon. If desired, you can use the leftover pulp to add to the filling. Set aside.
In a pan with hot olive oil, sauté the onion along with the garlic until slightly translucent. Add the drained Herdez® Water Flaked Tuna, paprika, tomato puree, parsley, and oregano. Season with salt and pepper, and cook over medium-low heat for 6 minutes, then remove from heat.
Fill the potatoes with the previous mixture, place them on a baking tray, and add cheddar cheese and mozzarella cheese. Bake for 5 minutes at 200 °C.
Serve and decorate with fresh oregano. Accompany with dressings to taste.
