Green Apple Ceviche

This fish and Granny Smith apple-based recipe is ideal for Lent, and it allows you to give a twist to the classic ceviche; with this version, you will have a fresh green fish ceviche with the irresistible touch of apples.

  • 3 pieces granny smith Washington® apple
  • 500 grams fish, cut into cubes
  • 1 1/2 cups lime juice
  • salt
  • pepper
  • 1/2 cups orange juice
  • 3 tablespoons olive oil
  • 1/4 cups basil
  • 1/4 cups cilantro
  • 1/4 cups onion, finely chopped
  • 1/2 cups cucumber, in cubes
  • 1 serrano chile, finely chopped
  • 1/2 cups avocado, in cubes
  • serrano chile, in thin slices, for garnish
  • cilantro leaves, for garnish
  • granny smith Washington® apple, in thin slices, for garnish
  • tostadas, baked

  • On a cutting board, dice the Granny Smith apple and set aside.
  • Mix the fish in a bowl with lemon juice, salt, and pepper; refrigerate and let marinate for 1 hour.
  • Blend the orange juice with the olive oil, basil, and cilantro.
  • Add the onion, cucumber, serrano chili, avocado, and Granny Smith apple to the bowl with the fish, also pour in the previous preparation and mix until all ingredients are incorporated.
  • Serve, garnish with sliced serrano chili, cilantro leaves, and apple slices, accompany with baked toast.
