On a cutting board, dice the Granny Smith apple and set aside.
Mix the fish in a bowl with lemon juice, salt, and pepper; refrigerate and let marinate for 1 hour.
Blend the orange juice with the olive oil, basil, and cilantro.
Add the onion, cucumber, serrano chili, avocado, and Granny Smith apple to the bowl with the fish, also pour in the previous preparation and mix until all ingredients are incorporated.
Serve, garnish with sliced serrano chili, cilantro leaves, and apple slices, accompany with baked toast.
