Green Apple Ceviche

This recipe based on fish and granny smith apple is ideal for Lent, in addition to allowing you to give a twist to the classic ceviche of all time; With this version you will have a fresh green fish ceviche with the irresistible touch of apples.

  • 3 pieces granny smith Washington® apple
  • 500 grams fish, cut into cubes
  • 1 1/2 cups lime juice
  • salt
  • pepper
  • 1/2 cups orange juice
  • 3 tablespoons olive oil
  • 1/4 cups basil
  • 1/4 cups cilantro
  • 1/4 cups onion, finely chopped
  • 1/2 cups cucumber, in cubes
  • 1 serrano chile, finely chopped
  • 1/2 cups avocado, in cubes
  • serrano chile, thinly sliced, for garnish
  • cilantro leaves, to decorate
  • granny smith Washington® apple, thinly sliced, for garnish
  • tostadas, baked

  • On a cutting board, diced the granny smith apple and reserve.
  • Mix the fish in a bowl with the lemon juice, salt and pepper; Refrigerate and marinate for 1 hour.
  • Blend the orange juice with the olive oil, basil and coriander.
  • Add the onion, cucumber, serrano pepper, avocado and granny smith apple to the bowl with the fish, also pour in the previous preparation and mix until all the ingredients are incorporated.
  • Serve, garnish with sliced serrano pepper, coriander leaves and apple slices, served with baked toast.
