Green Fish in Garlic Sauce

  • 1 cup parsley
  • 1/4 cups water
  • 4 cloves garlic, roasted
  • pinches coarse salt
  • 4 allspice berries
  • 4 fish fillets
  • 4 cloves garlic, sliced
  • 2 tablespoons olive oil
  • purslane, for garnish
  • zucchini, and bell pepper, for garnish

  • Blend the cilantro, parsley, and water for 3 minutes.
  • In a molcajete, grind the roasted garlic, coarse salt, and black pepper.
  • Place the fish on a baking tray and cover with the garlic paste, then drizzle with the sauce, add sliced garlic and olive oil. Bake for 18 minutes at 180°C.
  • Serve, garnish with purslane, and accompany with roasted vegetables. Enjoy.
