Grilled Oysters

Delicious grilled oysters accompanied by a chipotle vinaigrette.

  • 40 fresh oyster
  • 4 tablespoons white vinegar
  • 1 tablespoon balsamic vinegar
  • 2 cloves garlic
  • 1/2 cups chipotle chile, canned chopped
  • 1/2 tablespoons salt
  • 1/2 cups olive oil

  • Prepare your grill so that the coals are red and hot but without flames.
  • In a deep bowl, mix the ingredients for the vinaigrette: white vinegar, balsamic vinegar, chopped garlic, chipotle, salt, and olive oil.
  • Open the oysters and place a tablespoon of vinaigrette on each oyster. Cook the oysters on the grill for 5 minutes or until the edges of the oysters are slightly raised.
  • Serve the oysters on a platter and accompany with the remaining vinaigrette.
