A rich oysters grilled accompanied by a chipotle vinaigrette.

Ingredients

6 portions
  • 40 fresh oysters
  • 4 tablespoons white vinegar
  • 1 tablespoon balsamic vinegar
  • 2 cloves garlic
  • 1/2 cups chipotle chili, of chopped tin
  • 1/2 tablespoons salt
  • 1/2 cups olive oil

Preparation

Prepare your grill so that the charcoal is red and hot but without flames.
In a deep bowl, mix the ingredients of the vinaigrette: white vinegar, balsamic vinegar, chopped garlic , chipotle, salt and olive oil.
Open the oysters and place a tablespoon of vinaigrette on each ostion. Put the oysters to cook on the grill for 5 minutes or until the oysters have their edges slightly raised.
Serve the oysters in a platter and serve with the remaining vinaigrette.

PRESENTATION

You can put 2 oysters and two tablespoons of vinaigrette on individual plates, decorating them with coarse salt.
