Healthy Tuna Medallions

Delicious recipe for tuna medallions, a very healthy recipe. Pair this tasty tuna with hibiscus water and a rich potato puree.

  • 4 Dolores® tuna medallions
  • 4 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, chopped
  • 2 green bell peppers, diced
  • 2 potatoes, peeled and diced
  • 2 tablespoons tomato purée
  • salt
  • pepper
  • water, as needed

  • The oil is heated and the onion is sautéed.
  • Garlic and bell pepper are added and allowed to sauté slightly.
  • The potatoes and puree are added and seasoned with salt and pepper.
  • Water is added to cover the vegetables and they are allowed to cook on low heat for 15 minutes.
  • The medallions are added and cooked for 10 more minutes.
  • The flavor is adjusted and served with steamed rice and vegetables.
