4 Dolores® tuna medallions
4 tablespoons olive oil
1 onion, chopped
2 cloves garlic, chopped
2 green bell peppers, diced
2 potatoes, peeled and diced
2 tablespoons tomato purée
salt
pepper
water, as needed

The oil is heated and the onion is sautéed.
Garlic and bell pepper are added and allowed to sauté slightly.
The potatoes and puree are added and seasoned with salt and pepper.
Water is added to cover the vegetables and they are allowed to cook on low heat for 15 minutes.
The medallions are added and cooked for 10 more minutes.
The flavor is adjusted and served with steamed rice and vegetables.
