Lemon Mussels

Delicious and fresh lemon mussels for a snack. Served in its shell it makes them look very gourmet.

12 mussels, well washed
1 lime
1 sprig celery, finely chopped
1 Roma tomato
12 leaves basil
1 green onion, chopped
2 tablespoons olive oil

Put the washed and drained mussels in a saucepan with boiling salted water for 3 minutes. Take them out and remove the top cap from each one.
Detach the mussel from the shell and put it back in place. This way it will be easier to eat them. Reserve on a platter.
Cut 2 thin slices of the lemon and cut them into triangular pieces. The rest of the lemon squeeze it.
Stir the chopped celery with the diced tomato, the chopped basil and the finely chopped onion.
Add the lemon juice, oil, salt and pepper and stir. Put about a tablespoon of this mixture on each mussel and decorate with a lemon wedge.
