Mango and Salmon Sushi

Sushi is a delicious traditional Japanese dish. It consists of rolls with Japanese rice, seaweed, and fillings such as fish, vegetables, and fruits. This fusion recipe combines the Latin flavor of mango with Eastern flavors.

  • 300 grams salmon fillet, cut into strips
  • 4 tablespoons mayonnaise
  • 2 tablespoons lime juice
  • 2 tablespoons brown sugar
  • 5 cups sushi rice, see recipe on Kiwilimon
  • 4 leaves nori
  • 1 cucumber, peeled and seeded, cut into strips
  • 1 mango, peeled and cut into strips
  • 4 tablespoons black sesame seeds

  • In a deep bowl, mix the salmon, mayonnaise, lemon juice, and brown sugar.
  • Place a piece of plastic on a sushi mat. With wet hands, shape approximately 1 1/2 cups of sushi rice into a rectangle slightly smaller than the sushi mat.
  • Place a sheet of seaweed on the rice. Put 1/4 of the salmon mixture aligned in the center of the seaweed. Add 1/4 of the cucumber strips and 1/4 of the mango strips on top.
  • Using the sushi mat, roll the seaweed over the filling and press firmly to form the roll.
  • Remove from the plastic and repeat with the other 3 rolls.
  • Garnish the rolls with black sesame seeds and using a wet knife, cut each roll into 8 pieces. Wet the knife between each cut for clean slicing of the rolls.
