Marinated Fish

In Mexico, there are many varieties of marinated fish, mainly prepared with ancho chili or morita chili, a few cloves of garlic, onion, oregano, a hint of cumin, and a touch of vinegar. This marinated fish will be a sensation and is very easy to prepare.

  • 2 tablespoons olive oil, for marinade
  • 3 cloves garlic, for marinade
  • 1/2 white onions, for marinade
  • 6 ancho chiles, cleaned and seedless, for marinade
  • 5 morita chiles, for marinade
  • 2 guajillo chiles, for marinade
  • 1 tomato, in quarters, for marinade
  • 1 teaspoon oregano, for marinade
  • 1 teaspoon allspice berry, for marinade
  • 1 teaspoon cumin, for marinade
  • 1/8 cups orange juice, for marinade
  • 1/8 cups vinegar, pineapple, for marinade
  • 1 pinch salt, for marinade
  • 4 fish fillets, (red snapper, snook, or basa) approximately 250 grams per piece
  • 1 cup red onion, fileted
  • 1 orange, cut into half moons
  • 1 cup fresh cilantro

  • For the marinade, heat a pan over medium heat with olive oil, cook the garlic, onion, chiles, tomato, oregano, allspice, and cumin for 10 minutes. Place the ingredients in the blender and blend for 3 minutes with orange juice and pineapple vinegar, lightly season with salt and set aside.
  • In a baking dish, marinate the fish with the marinade for 1 hour.
  • Heat a grill or pan over high heat and cook the fish for 10 to 15 minutes depending on thickness. Remove from the pan and serve with orange, red onion, fresh cilantro, accompanied by lime and vegetables or rice. Enjoy.
