Fish Adobo

This outrageously good fish adobo will have the whole table fighting for seconds! Drool-worthy fish spooned over with a spicy adobo sauce prepared with a delish combination of allspice berries, oregano, onion, and ancho, morita, and guajillo chiles, will make this fish adobo recipe impossible to resist!

  • 2 tablespoons olive oil, for the adobo sauce
  • 3 cloves garlic, for the adobo sauce
  • 1/2 white onions, for the adobo sauce
  • 6 ancho chiles, trimmed, seeded, and rehydrated, for the adobo sauce
  • 5 morita chiles, for the adobo sauce
  • 2 guajillo chiles, for the adobo sauce
  • 1 tomato, cut into quarters, for the adobo sauce
  • 1 teaspoon oregano, for the adobo sauce
  • 1 teaspoon allspice berry, for the adobo sauce
  • 1 teaspoon cumin, for the adobo sauce
  • 1/8 cups orange juice, for the adobo sauce
  • 1/8 cups vinegar, pineapple, for the adobo sauce
  • 1 pinch salt, for the adobo sauce
  • 4 fish fillets, red snapper, sea bass, or basa, 8.8 oz each
  • 1 cup red onion, sliced 
  • 1 orange, cut into half-moons
  • 1 cup fresh cilantro

  • For the adobo sauce: In a skillet over medium heat, heat olive oil. Cook garlic, onion, ancho chiles, morita chiles, guajillo chiles, tomato, oregano, allspice berries, and cumin for 10 minutes. Transfer ingredients to a blender, add orange juice and pineapple vinegar and blend until smooth. Season with salt. Set aside.
  • In a baking dish, marinate fish with adobo sauce for about 1 hour.
  • On a griddle or skillet over high heat, cook fish fillets for 10 to 15 minutes depending on their thickness. Remove from skillet. Serve fish adobo with orange, red onion, fresh cilantro, lime, and vegetables or rice on the side.
