Marlin-Stuffed Peppers in Tomato Sauce

  • 1 tablespoon vegetable oil, for the filling
  • 1 tablespoon garlic, finely chopped, for the filling
  • 1/2 cups onion, finely chopped, for the filling
  • 1/4 cups fresh cilantro, finely chopped, for the filling
  • 1 cup marlin, finely chopped, for the filling
  • 1/4 cups Del Fuerte® seasoned tomato sauce, for the filling
  • 1 pinch salt, for the filling
  • 10 Jalapeño chiles, cleaned and seedless
  • 1 egg, beaten for breading
  • 1 cup flour, for breading
  • 1 cup breadcrumbs, for breading
  • 1 cup pork rinds, crushed, for breading
  • 1 cup vegetable oil, for frying
  • fresh cilantro, for decorating

  • Heat a skillet over medium heat, cook the garlic and onion with the oil. Add the marlin and the Condimenting Tomato Purée from Del Fuerte®, cook for 5 to 7 minutes; cool slightly.
  • Stuff the jalapeño peppers with the previous preparation, close with the help of a toothpick.
  • Bread the peppers by passing them through egg, flour, and breadcrumbs mixed with the pork cracklings.
  • Fry the peppers in the oil, place on absorbent paper, remove the toothpicks, and serve.
