If you enjoy garnachas, this recipe will be a great option to prepare. It’s an economical and practical way to make pescadillas, with the touch of Herdez® Tuna in water, making it healthier and, of course, rich in protein.
2 tablespoons garlic, finely chopped, for the filling
2 cups tomato, in medium cubes, for the filling
1/4 cups serrano chile, finely chopped, for the filling
3 envelopes Herdez® water-packed tuna flakes, 85 g
1/2 cups cilantro, finely chopped

20 corn tortillas
vegetable oil, for frying
lime, for serving

In a hot pan, pour in the olive oil and sauté the onion with the garlic until they have a shiny tone; then add the tomato and serrano chili, cooking for 3 minutes over medium-low heat, stirring constantly. Add the Herdez® Flaked Tuna in Water, cilantro, salt, and pepper; cook for 6 more minutes over low heat. Remove from heat and cool slightly.
Place a slightly warm tortilla on a flat surface, add a bit of the previous mixture, and fold into a quesadilla, using a wooden toothpick to secure the filling. Repeat until all tortillas are used.
Heat enough vegetable oil in a pan, place the tuna quesadillas and fry both sides for 5 minutes over medium heat. Drain on paper towels.
Serve immediately, garnish with cilantro leaves, and accompany with lime to taste and guacamole.
