Molletes with Shrimp and Chile de Árbol Sauce

This dish is always the most popular choice for breakfast or dinner, delicious molletes made with toasted bolillo topped with butter, spread with refried beans, shrimp, and melted cheddar cheese. Incredible.

  • 4 bolillo rolls, cut in half
  • 1/4 cups butter
  • 1 cup refried beans
  • 1 cup shrimp, cleaned and sautéed in the pan with olive oil and onion
  • 1 cup cheddar cheese, shredded
  • 1/2 cups árbol chile sauce, to accompany

  • Preheat the oven to 200° C.
  • Toast the bolillos on a griddle with a bit of butter. Remove from the griddle and spread with warm refried beans.
  • Place the shrimp on the bolillos, cover with cheddar cheese and a bit of sauce.
  • Serve.
