Mussels in Saffron Sauce with Tomatoes

This mussel recipe does not contain any butter. For those who love mussels and saffron, it is a delicious and very easy dish to prepare.

  • 2 kilos mussels, cleaned and washed
  • 2 1/2 cups tomato, diced
  • leaves basil, fresh
  • leaves parsley
  • 1 handful fresh thyme
  • 2 teaspoons salt
  • 1/8 teaspoons saffron
  • 2 1/4 cups white wine, (Sauvignon Blanc is recommended)
  • 1/4 cups olive oil
  • 1 teaspoon lime juice

  • In a large pot, place the mussels, tomatoes, chopped basil, parsley, thyme, salt, and saffron.
  • Stir well and then add the wine, lemon juice, and oil.
  • Stir everything again and cover the pot. Cook on high heat until all the mussels open, between 2-8 minutes depending on the pot.
  • Remove the mussels that did not open (and throw them away).
  • Serve in deep plates along with baguette bread.
