Mussels in Saffron Sauce with Tomatoes

This recipe for mussels does not have any butter. For those who love mussels and saffron, it is a delicious and very easy to prepare dish.

  • 2 kilos mussels, clean and washed
  • 2 1/2 cups tomato, chopped into cubes
  • leaves basil, cool
  • leaves parsley
  • 1 handful fresh thyme
  • 2 teaspoons salt
  • 1/8 teaspoons saffron
  • 2 1/4 cups white wine, (Sauvignon Blanc is recommended)
  • 1/4 cups olive oil
  • 1 teaspoon lime juice

  • In a large pot put the mussels, tomatoes, chopped basil, parsley, thyme, salt and saffron.
  • Stir well and then add the wine, lemon juice and oil.
  • Stir all over again and cover the pot. Cook over high heat until everyone opens, between 2-8 minutes depending on the pot.
  • Remove the mussels that did not open (and throw them away).
  • Serve in bowls with baguette bread.
