Mussels in Saffron Sauce with Tomatoes

This mussel recipe does not contain any butter. For those who love mussels and saffron, it is a delicious and very easy dish to prepare.

2 kilos mussels, cleaned and washed
2 1/2 cups tomato, diced
leaves basil, fresh
leaves parsley
1 handful fresh thyme
2 teaspoons salt
1/8 teaspoons saffron
2 1/4 cups white wine, (Sauvignon Blanc is recommended)
1/4 cups olive oil
1 teaspoon lime juice
Preparation

In a large pot, place the mussels, tomatoes, chopped basil, parsley, thyme, salt, and saffron.
Stir well and then add the wine, lemon juice, and oil.
Stir everything again and cover the pot. Cook on high heat until all the mussels open, between 2-8 minutes depending on the pot.
Remove the mussels that did not open (and throw them away).
Serve in deep plates along with baguette bread.
