Mussels in Saffron Sauce with Tomatoes

This recipe for mussels does not have any butter. For those who love mussels and saffron, it is a delicious and very easy to prepare dish.

2 kilos mussels, clean and washed
2 1/2 cups tomato, chopped into cubes
leaves basil, cool
leaves parsley
1 handful fresh thyme
2 teaspoons salt
1/8 teaspoons saffron
2 1/4 cups white wine, (Sauvignon Blanc is recommended)
1/4 cups olive oil
1 teaspoon lime juice
Preparation

In a large pot put the mussels, tomatoes, chopped basil, parsley, thyme, salt and saffron.
Stir well and then add the wine, lemon juice and oil.
Stir all over again and cover the pot. Cook over high heat until everyone opens, between 2-8 minutes depending on the pot.
Remove the mussels that did not open (and throw them away).
Serve in bowls with baguette bread.
