This recipe for mussels does not have any butter. For those who love mussels and saffron, it is a delicious and very easy to prepare dish.

Ingredients

4 servings
  • 2 kilos of mussel clean and washed
  • 2 1/2 cups of tomato chopped into cubes
  • leaves of basil cool
  • leaves of parsley
  • 1 fist of fresh thyme
  • 2 teaspoons of Salt
  • 1/8 of teaspoonful of saffron
  • 2 1/4 cups of White wine (Sauvignon Blanc is recommended)
  • 1/4 of Cup of olive oil
  • 1 teaspoonful of lemon juice

    Preparation

    In a large pot put the mussels, tomatoes, chopped basil, parsley, thyme, salt and saffron.
    Stir well and then add the wine, lemon juice and oil.
    Stir all over again and cover the pot. Cook over high heat until everyone opens, between 2-8 minutes depending on the pot.
    Remove the mussels that did not open (and throw them away).
    Serve in bowls with baguette bread.
